Located in La Union, Colombia, the farm's transformation, spearheaded by farmers like Frank, has shifted it from a region of illicit trade to a resilient community dedicated to specialty coffee production, boasting a rich history of exceptional coffee spanning over 40 years under the stewardship of the Torres family. Frank, a passionate Q grader with a background in Starbucks' specialty coffee program and experience as a green coffee buyer, oversees all processing and farming practices on his inherited portion of the farm, utilizing innovative techniques such as in-cherry fermentation for 70 hours followed by depulping and an additional fermentation period of 40 hours to enhance complexity and flavor nuances. Through continuous efforts to improve farming practices, Frank has transitioned 90% of the farm to organic methods, preserving soil conditions and protecting crops, while meticulously refining the drying process to achieve optimal moisture content for exceptional quality coffee.
