COF-PD-0025Here is Prodigal's first washed Ethiopian coffee of the season. At the washing station, coffee cherries float in water to remove debris and underripe cherries. Then they're de-pulped and left to dry ferment in tanks for 2-3 days, followed by washing and drying on raised beds. To ensure even drying, the parchment is frequently mixed and rotated, taking 7-10 days.
