Three Marks - Shyira
COF-3M-0019Built in 2017 at 2000 masl, Shyira Washing Station in Rwanda collects cherries from nearby producers living between 2000 - 2400 masl, and is one of the highest altitude coffee operations in the country. The station's unique location in a stunning area with easy water access makes it special. The coffee cherries are meticulously hand-sorted, floated, pulped, and then fermented in concrete tanks for about 12 hours, with ceremonial foot-stomping to aid the process. After fermentation, the coffee is post-wash rinsed, hand-sorted, and dried for 30 days.
