COF-AS-0002The Overripe Fermentation Series, brought to you by Assembly, Mió, and Professor Lucas Louzada, represents a significant step in researching solutions to mitigate the effects of climate change on coffee production. Due to unprecedented climate conditions, 75% of Mió’s 2024 crop was classified as not ripe, with 90% being overripe. To address this, data-driven fermentation protocols by Professor Louzada’s team were applied to three lots from this harvest, improving their cup score. This specific lot was processed using a carbonic maceration technique, similar to winemaking, where overripe cherries were placed in an oxygen-free tank at 38°C for 72 hours, then naturally dried without washing
