The Overripe Fermentation Series, brought to you by Assembly, Mió, and Professor Lucas Louzada, represents a significant step in researching solutions to mitigate the effects of climate change on coffee production. Due to unprecedented climate conditions, 75% of Mió’s 2024 crop was classified as not ripe, with 90% being overripe. To address this, data-driven fermentation protocols by Professor Louzada’s team were applied to three lots from this harvest, improving their cup score.
