Produced by Gabriel Castaño Buendía, hailed as the "godfather of Pink Bourbon," at La Granada farm in Acevedo, Huila, Colombia, this anaerobic washed Pink Bourbon is grown at 1,700 meters. The cherries undergo a 48-hour anaerobic fermentation in sealed plastic tanks, followed by an additional 18 hours in GrainPro bags to promote lactic acid production, before being washed and sun-dried to 10.5% moisture content. The cup offers a delicate and refined experience with notes of candied lemon, apricot, honey, and soft florals, evoking the elegance of high tea on a warm spring day.
