Pineberry is an elegant anaerobic washed Pink Bourbon from the Zarza family at Finca Zarza in Huila, Colombia, grown at 1,750 meters. The cherries undergo a meticulous process including 24 hours of oxidation, 24 hours of anaerobic fermentation, de-pulping, and an additional 32-hour anaerobic fermentation, followed by hot water mucilage removal, washing, and an 8-day drying period. This careful processing produces a harmonious cup with notes of pink fruits, peach, jasmine, and honey, showcasing the complexity and dedication of the Zarza family
