COF-EP-0030Produced by Rigoberto and Luis Herrera at Finca Las Margaritas in Caicedonia, Valle del Cauca, Colombia, this Sudan Rume variety is grown at elevations up to 1,850 meters. The cherries are selected at 18 BRIX, aerobically fermented for two days, and then dried in full cherry inside mechanical driers at 24°C for five days to reach a moisture content of 12.5%. Following this, the coffee is depulped, cleaned, and left to stabilize in a temperature-controlled room for three months to ensure consistency. This meticulous processing results in a complex cup profile with notes of mint chocolate ice cream, butterscotch, pineapple, ripe melon, chamomile, and lavender, reflecting the dedication and expertise of the Herrera family
