Ethica - The Darcys: Hambela Anaerobic Natural
COF-EK-0108Ethica Coffee Roasters' fourth collaboration with Toronto's art rock band, The Darcys, features an anaerobic natural coffee from the Idido station in Yirgacheffe, Ethiopia. This lot consists of Dega, Kurume, and Wolisho varieties grown at elevations up to 2,200 meters. Farmers are trained to pick only deep purple cherries with a Brix reading above 22, enhancing the coffee’s fermented characteristics. After selection, the cherries undergo a 96-hour anaerobic fermentation before drying on African beds for 15-18 days. The result is a vibrant and complex cup with wine-like acidity, a honeyed sweetness, and juicy grape notes
