The Montero family has been pioneers in the region’s micro-mill revolution, with Jacob refining innovative drying techniques such as the Slow Dry Natural (SDN) process. By carefully controlling drying under shade and moving cherries frequently, this method enhances the coffee’s complexity. The result is a bright and fruit-forward cup with notes of grapefruit, guava, mango, and brown sugar
