This washed Geisha from Isidro Castillo’s Finca San José in Nariño, Colombia, is grown at up to 1950 meters and undergoes a carefully managed fermentation—17 hours of oxidation followed by 74 hours with brewer's yeast. The result is a clean and elegant cup with floral aromatics, juicy peach notes, and a delicate wildflower honey sweetness
