Luna Coffee - Ildefonso Córdoba: Bourbon Aji
COF-LN-0090Bourbon aji, a new coffee variety popular in Huila, is being cultivated by Ildefonso, who manages a seed nursery with seeds from La Esperanza. This variety, native to Bruselas, is resistant to fungal issues like coffee leaf rust and has cherries that ripen to a chili color with a slight spiciness, which has intrigued local farmers. Despite its name, genetic tests revealed that bourbon aji is actually derived from a rare Ethiopian landrace, a recurring theme with coffee varieties in southern Huila.
