The ripe coffee cherries were fermented whole in sealed bags for 60-70 hours, then depulped and fermented underwater for an additional 48 hours. This meticulous processing results in a gentle cup with sweet notes of pink jam and elegant guava-like fruits, reflecting Ildefonso's dedication to quality and his role as a key member of the Guacharos producer group
