Luna Coffee - Jhoan Vergara
COF-LN-0083Produced by Jhoan Vergara on his family farm, Las Flores, in San Isidro, Huila, Colombia, this Pink Bourbon variety underwent an anaerobic washed process. The cherries were first oxidized whole for 24-48 hours, then depulped and subjected to a yeast-inoculated anaerobic fermentation using a starter culture developed by Jhoan. A warm rinse encouraged further microbial activity before the coffee was gently mechanically dried. This meticulous processing results in an intensely aromatic cup with a lemon-candy acidity, tea-like florals, and botanical notes reminiscent of spruce tips, juniper, and bergamot, showcasing Jhoan's innovative approach to fermentation
