Luis’s processing technique promotes complex fruit flavours, reminiscent of Ataulfo or honey mangoes, with supporting notes of round vanilla and bright berries. This exceptional washed Pink Bourbon is the result of a fermentation process where whole fruit is sealed in bags for 24 hours, followed by 60-80 hours in a low-oxygen environment, allowing beneficial microbes to enhance fruit-forward complexity.
