José Giraldo, a third-generation coffee producer from Cafe 1959, has continued his family's legacy of innovative coffee processing, implementing unique methods both at their Las Marias Estate and with partner farms across Colombia. His father, a Ph.D. in food engineering, initially researched various processing methods, which José has expanded upon with his own designs. This Sidra coffee, sourced from the partner farm El Provenir, undergoes a triple fermentation process involving carbonic maceration and meticulous drying over 30 days. The resulting coffee, celebrated for its quality, boasts flavors of peach fizz, tropical fruit, and raisin with a juicy mouthfeel.
