Manhattan - Nestor Lasso: Ombligon
COF-MH-0114Produced by Nestor Lasso at El Diviso farm in Pitalito, Colombia, this Ombligon variety undergoes an innovative natural process. After harvesting, the cherries are placed into open plastic tanks to oxidize for 48 hours, during which the cherry must is continuously recirculated. Following oxidation, the coffee is subjected to thermal shock by washing with 50°C water. This meticulous processing results in a unique flavor profile reminiscent of Dr. Pepper, Jolly Rancher candies, and vanilla, with a sticky mouthfeel, showcasing the experimental approach and dedication to quality at El Diviso
