The meticulous processing involves collecting cherries over three days, with fermentation periods of up to 20 hours in ceramic tiled tanks, followed by solar drying for 15-20 days. In the cup, expect a sweet and delicate profile with notes of caramel and berries, accompanied by a bright green apple sweetness and acidity, culminating in a long, satisfying apple finish
