The cherries are hand-picked at peak ripeness, floated to remove defects, held in-cherry overnight, de-pulped, and dry-fermented for 48 hours. Drying is initiated in a mechanical dryer maintained between 20-30°C (68-86°F) for 24 hours, followed by stabilization in sealed GrainPro bags for one week, and finished in the mechanical dryer until reaching a moisture content of 10%.
