COF-SQ-0039Produced by six smallholders in Huila, Colombia, this blend of Caturra and Castillo varieties is processed using the washed method. The coffee offers a sweet and comforting profile with notes of baked apple, praline, and sultana, reminiscent of warming winter desserts. Each producer manages their own pulping and fermentation, with drying typically done on patios or raised beds built on the roofs of their houses. After reaching optimal humidity, lots are combined by cupping experts at Caravela’s buying center before being dry milled and prepared for export, showcasing the collaborative effort and dedication to quality
