Subtext - Alirio Ortega: Ombligon

The team at Subtext are huge fans of Alirio’s coffee and after working with his Pink Bourbon for a few years, they are delighted to offer the first harvest of his Ombligon and Aji varieties! These two rare varieties from Alirio are only available from Subtext here in North America! The word Ombligon comes from “ombigo” which is Spanish for belly button. The variety, found in Colombia is named this way for its belly button-like shape. While the genetics of Ombligon have not yet been verified, it is suspected that it is a mutation of an Ethiopian Landrace, just like other new rare varieties, including Sidra, Chiroso, and Pink Bourbon. Alirio’s Ombligon is very sweet and bright, showing notes of hibiscus, blackberry, and purple grape.
