COF-DA-0214Hydro Honey is an experimental coffee from the Danche Washing Station in Gedeb, Ethiopia, featuring a hydro extended fermentation natural process. This heirloom variety is grown at 2,300 meters and undergoes a 48-hour fermentation process, starting with 24 hours of aerobic fermentation and followed by 24 hours of anaerobic fermentation in a specially smoked fermentation tank. The cherries are dried for 48 hours on shaded beds before and after fermentation, ensuring a clean and vibrant profile with bright, juicy flavors of mandarine, yellow plum, and grapefruit
