Tasting Notes: Stewed strawberries, Apricot, Brown sugar

DAK celebrates its 5th anniversary of roasting with a special coffee! This unique lot was crafted by their partner and colleague, who returned to Ethiopia for a second year to experiment with yeast and fermentation. The result is even cleaner and more refined than last year, showcasing a fruity profile with a silky body. This yeast-assisted, semi-anaerobic natural process highlights tasting notes of jammy fruits, apricot, and brown sugar.

Strawberry and sweet

Enjoyed as a pour over. Sweet cup with hints of strawberry and apricot.

Jammy and sweet

This Is a fantastic natural Ethiopian. Very sweet cup with strong notes of stewed strawberries, and a super jammy finish. Has a nice earthy body to balance out the sweetness. Can definitely tell it’s anaerobic process, but not overwhelmingly so. Really quite balanced for this Style.

Strawberry jam

I had tried two strawberry co-fermented coffees before this one but none of those had the sweet strawberry notes of this one! it is just like the strawberry jams my mom used to make! Although it is an anaerobic process coffee you barely feel those annoying fermenty notes.
