This vibrant Papayo coffee from Wilmer Moncayo Gallardo's Finca La Loma in Huila, Colombia, is the result of an ambitious replanting and processing effort. Using a "salt natural" process, cherries are fermented in a container with a 2% salt solution before being depulped, washed, and dried. This innovative method yields a bright and outspoken cup with notes of bergamot, blueberry, and sweet toffee.

Another great omni roast option (I know it says filter)

Another great omni roast option (I know it says filter) . This one comes in really well rounded on espresso for me personally. Quite perfumed with lime/orange, a little blueberry tartness and a pleasant caramel finish.

Salt of the earth

Bright and round. Reminiscent of truffles, grapes, and burnt sugar. I'd recommend sorting this coffee as I encountered a fair number of defects and deformed beans.
