COF-KF-0011This exceptional Sidra coffee from Nestor Lasso's El Diviso farm in Huila, Colombia, is meticulously processed using an anaerobic natural method. Cherries are picked at optimal ripeness, undergo pre-sorting and barrel fermentation to a pH of 4.5, followed by a 50°C thermal shock and an 80-hour anaerobic fermentation with yeast, resulting in a complex cup with notes of cherry, lemon shortbread, red apple, dark chocolate, and lemongrass
