This is one of the most insane geishas that Manhattan Coffee Roasters has ever sent us. The processing is a combination of aerobic (60 hours in a pressurized tank), anaerobic (36 hours in mucilage at 18c with the addition of Leuconostoc bacteria), thermal shock and the Enigma dryer (a circular drying system) for 29 hours reaching a final humidity of 10%.

Very good but pricy

I picked up a large bag of Letty Bermudez last month on my peach hunt and it was very nice! Not quiet as in your face peach as some coferments (like those from Good Brothers or Black and White) but the balance of peach and chocolate was lovey. It is pricey but worth it to try
