Tasting Notes: Rosehip, Nectarine, Cinnamon

The Ají coffee, released in 2023, is a rare variety often mistaken for Bourbon Ají but is genetically distinct and believed to be a newly discovered Ethiopian Landrace. Known for its mildly spicy pepper character, the coffee exhibits red fruit flavors and mild floral undertones as it cools. Producer Javier, with a family background in coffee picking, transitioned to become a producer, planting Pink Bourbon initially and later switching to Bourbon Ají after a neighbor's discovery. Despite genetic testing revealing its Ethiopian origin, José Salazar's Bourbon Ají impressed judges in the 2021 Cup of Excellence, securing 6th place with a score of 89.32. The unique coffee undergoes meticulous processing, offering a complex profile with toffee, freshly baked pastries, a spectrum of fruit notes, and a distinct nectarine note when found at its sweet spot, along with pronounced yet subtle spice notes reminiscent of rosehip and cinnamon.
