Sebastián has established himself as one of Colombia's premier specialty coffee producers, driven by his dedication to maintaining the high reputation of El Placer farm. The farm's process involves harvesting and classifying cherries, followed by anaerobic fermentation in 200L cans with CO2 injection, immersion in oxygenated water, and a controlled drying phase under canopy and polyshade for approximately 25 days, resulting in exceptional coffee quality.
