The hybrid washed process begins with a 48-hour aerobic fermentation in cherry, followed by depulping and rinsing. The coffee is then dried in mechanical silos for five days to achieve a moisture content of 10.5%. Subsequently, it is stabilized in a humidity and temperature-controlled environment at 15°C for 2-3 months in parchment. This meticulous processing results in a vibrant and complex cup profile with floral and tropical fruit notes, including jasmine, mango, and ripe citrus, complemented by sweetness reminiscent of stevia, dates, plum, and peach candy
