Big Apple is a co-fermented Pink Bourbon from Edwin Noreña in Huila, Colombia, grown at 1,750 meters. The process begins with a 2-hour water soak, followed by 72 hours of carbonic maceration to collect mossto, a juice inoculated with yeast, glucose, and amino acids. This mossto, infused with dehydrated green apples, is used during a 72-hour submerged fermentation, resulting in a vibrant cup with intense notes of green apple, green grapes, and cherry cola, offering a unique coffee experience

Delicious!

This one is another knock out from Dak. Very nice co-ferment with a nice apple tone that isn't to over powering. Very juicy and easy to brew.

Anyone who loves co-fermented coffee should try this one. Yes again Edwin norena makes great one. I can feel all of the notes: apples, grapes, all that greens and cola! Really enjoyed this.

I'm new to the co fermented coffees and I have to say I really like this one. I usually enjoy coffee that push the funky tasting notes, I would say this one is a more subtle but very enjoyable
