The process begins with a 2-hour water soak, followed by 72 hours of carbonic maceration to collect mossto, a juice inoculated with yeast, glucose, and amino acids. This mossto, infused with dehydrated green apples, is used during a 72-hour submerged fermentation, resulting in a vibrant cup with intense notes of green apple, green grapes, and cherry cola, offering a unique coffee experience
