COF-MH-0107Manhattan are thrilled to continue our partnership with José Giraldo, featuring a collaboration between Cafe 1959 and Finca El Diamante. This Pink Bourbon variety coffee, known for its sweet mucilage and bright, clean profile, is processed at Cafe 1959's La Clarita drying station. The cherries undergo a meticulous fermentation and drying process, including nighttime transport to control temperature and multiple stages of fermentation. The result is a coffee with notes of pineapple, white tea and marzipan.
