COF-RT-0051Ildefonso Córdoba, a seed expert from Los Guácharos in Bruselas, Huila, grows and distributes unique coffee varieties, including the Bourbon Aji, a recently identified Ethiopian landrace variety. This coffee undergoes a dual fermentation process: a 60-hour whole cherry fermentation followed by a 70-hour fermentation of the pulped seeds in sealed barrels, resulting in a coffee with layered fruit and floral aromas, lasting sweetness, and remarkable complexity. Despite its name, the Bourbon Aji doesn't present peppery notes in the cup but instead offers a profile reminiscent of Gesha.
